Burrata with Green Beans, Cherries + Candied Pecans 

A cosy, colourful plate that balances creamy, crunchy, and juicy textures with sweet and savoury flavours. Fresh green beans bring fibre and antioxidants, cherries add natural sweetness and vitamin C, burrata offers protein and calcium, while candied pecans provide healthy fats with a festive twist. Ingredients (serves 2–3)

300 g green beans, steamed

1 handful fresh cherries, pitted and halved

30 g pecans

1 large burrata

1 tbsp butter (or ghee)

2 tbsp honey

Extra virgin olive oil, for drizzling

Sea salt, to taste

 

Method

Make candied pecans: Melt butter in a pan over medium heat. Add pecans and drizzle in honey, stirring until coated. Sprinkle with sea salt and simmer gently until the nuts caramelise. Spread onto a lined tray to cool.

Assemble the plate: Arrange green beans on a serving platter, scatter with fresh cherry halves and candied pecans.

Add the burrata: Place burrata in the centre, drizzle with extra virgin olive oil, and finish with a pinch of crisp sea salt.

Enjoy immediately: Best served fresh, while the pecans are crunchy.
