Cashew Caramel Bites 

All the gooey sweetness of classic caramel slices- without the refined sugar or processed ingredients. These bites are rich, satisfying, and made entirely from gut loving, nutrient dense foods. With healthy fats from cashews, fibre rich dates, and antioxidant-packed dark chocolate, they’re a treat your body will thank you for.

 

 

Ingredients (makes — 12 squares)

250 g soft medjool dates, pitted

75 g cashew butter

2 tbsp water

1 pinch sea salt

1 tsp vanilla bean powder

1 tsp coconut oil

80 g Ombar mylk chocolate

 

Method

Blend the caramel: In a food processor, blitz together dates, cashew butter, water, vanilla, and a pinch of sea salt until smooth and creamy.

Layer it up: Spread the mixture evenly into a lined 4 × 8 inch tray.

Add the chocolate: Melt the chocolate with coconut oil, then pour over the caramel layer. Smooth out the top.

Set & slice: Refrigerate until firm, then cut into squares or bars.

Enjoy mindfully: Store in an airtight container in the fridge for up to a week.
