Cod with Lemon Grilled Zucchini and Egg Mayonnaise

Light, nourishing and protein rich. This dish balances fresh vegetables, quality protein and creamy homemade mayo for a simple yet satisfying meal.

 

 

Ingredients

1 fillet of cod 

1 courgette 

Cherry tomatoes 

Extra virgin olive oil  

Sea salt 

Lemon zest 

Black pepper


Mayo 

2 fried eggs 

2 tbsp olive oil 

1 tsp mustard 

Sea salt 

1 tsp dried basil

 

 Method

Combine all mayo ingredients in a small food processor and blitz for 3 minutes until light and creamy. Transfer to a serving pot and set aside. 

Finely slice the courgette with a mandolin and spread onto a baking tray. 

Add cherry tomatoes, sprinkle with sea salt, black pepper, and drizzle with extra virgin olive oil. Mix well by hand. 

Place cod fillet on top, season with olive oil, sea salt, and dried basil. 

Bake at 170°C for 15 minutes. 

Plate and serve with your mayo.
