Crispy Buckwheat Coated Aubergine with Miso Spinach

This golden, crispy aubergine recipe is light and nourishing. Instead of breadcrumbs, we use crushed buckwheat for that perfect crunch, naturally gluten-free, higher in protein, and packed with fibre. Paired with buttery miso spinach and a sprinkle of fresh alfalfa, this dish is as wholesome as it is delicious.

 

 

Ingredients (serves 1)

1 aubergine (eggplant)

1 egg

1 cup dry buckwheat

Sesame oil

200 g spinach

1 knob butter (or plant-based alternative)

2 tsp miso paste

Fresh alfalfa (for garnish)

 

Method

Prepare the aubergine: Slice into 4 thin pieces lengthways. From each slice, cut 6–8 strands from the top down, leaving about 1 inch intact, so the slices fan out like little octopus arms.

Season and soften: Rub the slices with sesame oil and fry for 3–4 minutes on each side until softened. Set aside to cool slightly.

Make the miso spinach: Steam the spinach for 2 minutes until just wilted. Transfer to a pan with butter and miso, stirring until coated and glossy. Arrange on your serving plate.

Prepare the coating: Lightly whisk the egg in a small bowl. Crush buckwheat in a pestle and mortar until fine, breadcrumb-like crumbs form.

Crisp it up: Brush the aubergine slices with egg, then coat with the crushed buckwheat. In a pan with hot oil, fry for 2 minutes per side until golden and crunchy.

Serve & enjoy: Place the crispy aubergine over your miso spinach. Finish with a scatter of fresh alfalfa for a refreshing touch.
