Greek Yoghurt Bars

High in protein, naturally sweet, and deeply satisfying. These freezer bars are made with just a few simple, nourishing ingredients for a wholesome treat that feels indulgent yet light.

 

 

Ingredients (serves 6 to 8)

Base
25 g puffed buckwheat
25 g puffed amaranth
1 tsp vanilla bean powder
50 g pistachio spread (Eat Life Collective works beautifully)
200 g Greek yoghurt

Top layer
100 g Greek yoghurt
20 g pistachio spread

 

Method

Line a small dish with baking paper.

Combine all base ingredients and press evenly into the prepared dish.

Spread Greek yoghurt over the base, then swirl through the pistachio spread for a marbled effect.

Place in the freezer for 2 hours to set.

Before serving, leave at room temperature for 20 minutes to soften slightly. Slice into bars and enjoy.
