Protein-Packed Summer Prawn Salad
A light, refreshing, and flavourful salad perfect for the summer months. This dish combines spicy, buttery prawns with juicy mango, creamy avocado, and gut-supporting herbs for a balanced, nourishing meal.

Ingredients (serves 1)
100 g prawns, peeled and deveined
1 knob butter
Franks RedHot sauce, to taste
½ avocado, cubed
½ mango, cubed
Fresh coriander, to taste
Juice of ½ lime
Extra virgin olive oil, to taste
Sea salt, to taste
Method
Prepare the fruit and avocado: Cube the avocado and mango and place in a bowl. Add a dash of Franks sauce, a pinch of sea salt, a squeeze of lime, and a drizzle of olive oil. Toss gently to combine.
Cook the prawns: Heat butter in a pan with a swirl of Franks sauce. Add the prawns and cook for 1–2 minutes on each side until just cooked through.
Assemble the salad: Place the mango and avocado mixture on a serving plate. Top with the cooked prawns. Garnish with micro herbs and an extra squeeze of lime.
